Since we aren't meeting in person, here is a refreshment you can make and enjoy at home.

 

Cranberry Crumb Bars"Cranberry bar"

Ingredients:

  • 3 cups flour
  • 1 1/2 cups sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 cup cold butter, cut into small cubes
  • 1 egg
  • 2 tablespoons milk
  • 12 ounces fresh or frozen cranberries
  • 1 teaspoon vanilla
  • 1 tablespoon cornstarch
  • 1 cup white chocolate chips
  • 1 tablespoon vegetable oil

 

Directions:

  1. Preheat over to 375 degrees.
  2. Spray inside of 9-inch by 13-inch baking pan with cooking spray.
  3. Mix together flour, sugar, baking powder, cinnamon and salt.
  4. Press cubes of cold butter into the flour until the mixture has pea-sized pieces.
  5. Stir in egg and milk to form a dough.
  6. Press half of dough into bottom of baking pan to form a crust. Set aside remaining dough.
  7. In a clean bowl, mix together sugar, cornstarch, vanilla and cranberries.
  8. Spread mixture over crust layer in baking pan.
  9. Sprinkle 2/3 cup of white chocolate chips over the mixture.
  10. Crumble remaining dough over the layered mixture.
  11. Place pan in oven for 40-45 minutes. Cool.
  12. Melt remaining white chocolate chips and oil in bowl by microwaving for 15 seconds at a time and stirring until smooth.
  13. Drizzle melted chocolate over the cooled treat. 
  14. Cut into bars before serving.
